Ingredients

  • 4 boneless skinless chicken thighs, cut into bite-sized pieces
  • 4 large eggs lightly beaten
  • 1 onion thinly sliced
  • 2 cups dashi broth or use a combination of water and chicken broth
  • 3 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sugar
  • Salt and pepper to taste
  • Cooked short-grain rice for serving

Instructions

  • In a large skillet or saucepan, combine the chicken and onion slices. Pour in the dashi broth, soy sauce, mirin, and sugar. Bring the mixture to a simmer over medium heat, then reduce the heat to low and let it simmer for 8-10 minutes, or until the chicken is cooked through and the onions are tender.
  • Slowly pour the beaten eggs over the chicken and onion mixture, making sure to evenly distribute them. Cover the pan and let the eggs gently cook for 2-3 minutes, or until they're just set.
  • Remove the pan from the heat and give the Oyakodon a gentle stir to incorporate the eggs. Serve the dish immediately over a bed of hot, steamed short-grain rice.
