Ingredients

slices
of whole grain or sourdough bread

ripe avocado
½
cup
cottage cheese
Salt and pepper to taste
Optional toppings: cherry tomatoes
radishes, fresh herbs, red pepper flakes, olive oil drizzle
Instructions
Browning the bread unto crispiness.
Cut the avocado into two halves, take out the seeds and scoop their content into a bowl.
Using a fork, mash the avocado, adding salt and pepper to taste.
On top of the toasted bread add a lot of cottage cheese.
Add avocado puree or thinly cut avocado on top.
Add as ringets of cherry tomatoes or thinly shaved white daikon radishes or bits and bunches of herbs or anything you think adds to it.
Pour in olive oil if you desire and add red spicy pepper powder or flakes if you desire for some heat.
Best served at once and enjoy as you wish.
Notes
If you like, use bread without gluten.
Feel free to add fresh herbs like cilantro, basil or chives for a more refreshing taste.
For additional protein, a poached egg or smoked salmon can be added on top.
