Ingredients

  • 2 cups elbow macaroni
  • 2 cups sharp cheddar cheese shredded
  • ½ cup mozzarella cheese shredded
  • 2 tablespoons unsalted butter
  • ¼ cup all-purpose flour
  • 2 cups whole milk
  • 1 teaspoon mustard powder
  • ½ teaspoon paprika
  • Salt and pepper to taste
  • Optional: ½ cup breadcrumbs for topping

Instructions

  • Cook the Pasta:
  • Bring a large pot of salted water to a boil. Add the elbow macaroni and cook until al dente (about 7-8 minutes). Drain and set aside.
  • Make the Cheese Sauce:
  • In a medium saucepan, melt butter over medium heat. Stir in the flour to create a roux and cook for 1-2 minutes, whisking constantly. Gradually add the milk, whisking until the sauce thickens (about 5-7 minutes). Stir in mustard powder, paprika, salt, and pepper.
  • Add Cheese:
  • Lower the heat and stir in the shredded cheddar and mozzarella until the cheese is fully melted and smooth.
  • Combine and Bake:
  • Preheat the oven to 350°F (175°C). Mix the cooked macaroni into the cheese sauce until well-coated. Transfer to a greased 9x13-inch baking dish. Sprinkle breadcrumbs on top if desired. Bake for 20-25 minutes or until the top is golden and bubbly.
