Clear Vegetable Soup Recipe

Ingredients

  • 8 cups vegetable broth
  • 1 medium onion finely chopped
  • 2 cloves garlic minced
  • 2 medium carrots diced
  • 2 celery stalks diced
  • 1 small zucchini diced
  • 1 cup green beans cut into 1-inch pieces
  • 1 cup cabbage shredded
  • 1 tablespoon olive oil
  • 1 bay leaf
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • 2 tablespoons fresh parsley chopped

Instructions

  • Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until translucent, about 3-4 minutes.
  • Add carrots and celery, cook for another 3-4 minutes.
  • Pour in the vegetable broth and add the bay leaf and thyme. Bring to a boil, then reduce heat and simmer for 10 minutes.
  • Add zucchini, green beans, and cabbage. Simmer for another 10-15 minutes or until all vegetables are tender.
  • Season with salt and pepper to taste.
  • Remove the bay leaf before serving.
  • Garnish with fresh parsley and serve hot.
