Ingredients

vegetable broth

medium onion
finely chopped

garlic

medium carrots
diced
2
celery stalks
diced

small zucchini
diced

green beans
cut into 1-inch pieces

cabbage
shredded
1
tablespoon
olive oil
1
bay leaf
1
teaspoon
dried thyme
Salt and pepper to taste

tablespoons
fresh parsley
chopped
Instructions
Heat olive oil in a large pot over medium heat. Add onions and garlic, sauté until translucent, about 3-4 minutes.
Add carrots and celery, cook for another 3-4 minutes.
Pour in the vegetable broth and add the bay leaf and thyme. Bring to a boil, then reduce heat and simmer for 10 minutes.
Add zucchini, green beans, and cabbage. Simmer for another 10-15 minutes or until all vegetables are tender.
Season with salt and pepper to taste.
Remove the bay leaf before serving.
Garnish with fresh parsley and serve hot.
