Ingredients

beef chuck

celery stalks

green beans
trimmed and cut

can diced tomatoes

beef broth

bay leaves

thyme

Salt and pepper to taste
Instructions
In a large pot, brown the cubed beef over medium-high heat. Season with salt and pepper.
Remove the beef and sauté the chopped vegetables in the same pot for 5-7 minutes.
Return the beef to the pot, add diced tomatoes, broth, bay leaves, thyme, and garlic.
Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, until the beef is tender.
Add any additional vegetables in the last 30 minutes of cooking.
Serve hot, garnished with fresh herbs if desired.
