Ingredients

  • 1 lb beef chuck cubed
  • 2 carrots chopped
  • 2 potatoes diced
  • 2 celery stalks chopped
  • 1 cup green beans trimmed and cut
  • 1 can diced tomatoes 14 oz
  • 6 cups beef broth
  • 2 bay leaves
  • 1 tsp thyme
  • 2 cloves garlic minced
  • Salt and pepper to taste

Instructions

  • In a large pot, brown the cubed beef over medium-high heat. Season with salt and pepper.
  • Remove the beef and sauté the chopped vegetables in the same pot for 5-7 minutes.
  • Return the beef to the pot, add diced tomatoes, broth, bay leaves, thyme, and garlic.
  • Bring to a boil, then reduce heat to low and simmer for 1.5 to 2 hours, until the beef is tender.
  • Add any additional vegetables in the last 30 minutes of cooking.
  • Serve hot, garnished with fresh herbs if desired.
