Ingredients

  • 1- inch piece of ginger grated
  • 2 tablespoons chili paste e.g., Gochujang or Sambal Oelek
  • 4 cups chicken or vegetable stock
  • 1/4 cup soy sauce
  • 2 tablespoons mirin
  • For the Noodles:
  • 2 servings of fresh or dried ramen noodles
  • Toppings Optional but Recommended:
  • 2 soft-boiled eggs halved
  • 2 tablespoons sliced scallions
  • 1 sheet of nori seaweed, cut into strips
  • 1 tablespoon chili oil for extra heat
  • 1/4 cup corn kernels optional
  • 1/4 cup sliced mushrooms optional

Instructions

  • Prepare the Broth:
  • Heat the sesame oil in a large pot over medium heat.
  • Add the minced garlic and grated ginger, sautéing until fragrant (about 1-2 minutes).
  • Stir in the chili paste and cook for another minute to release its flavors.
  • Simmer the Broth:
  • Pour in the chicken or vegetable stock, soy sauce, and mirin.
  • Stir well and bring the mixture to a gentle boil.
  • Reduce the heat and let the broth simmer for 15-20 minutes to allow the flavors to meld together.
  • Cook the Noodles:
  • While the broth is simmering, cook the ramen noodles according to the package instructions.
  • Drain the noodles and set them aside.
  • Assemble the Ramen Bowls:
  • Divide the cooked noodles evenly between two bowls.
  • Ladle the hot broth over the noodles until they are fully covered.
  • Add Toppings:
  • Top each bowl with your desired toppings, such as soft-boiled eggs, scallions, nori, corn, mushrooms, or a drizzle of chili oil for extra spice.
  • Serve and Enjoy:
