cherry tomatoes

bell pepper

red onion
sliced thin

feta cheese
crumbled

red wine vinegar

Dijon mustard
Salt and pepper to taste
Fresh parsley for garnish
Instructions
Cook the pasta in salted water until al dente. Drain and rinse with cold water.
In a large bowl, combine the pasta, tomatoes, cucumber, bell pepper, and red onion.
In a small bowl, whisk together the olive oil, vinegar, mustard, salt, and pepper.
Pour the dressing over the salad and toss to combine.
Garnish with feta cheese and parsley. Chill in the fridge for 30 minutes before serving.
Notes
This pasta salad can be made up to a day in advance.
For added protein, toss in grilled chicken or chickpeas.
