Ingredients

  • 12 oz rotini pasta
  • 1 cup cherry tomatoes halved
  • 1 cucumber diced
  • 1 bell pepper chopped
  • ½ red onion sliced thin
  • ½ cup feta cheese crumbled
  • ¼ cup olive oil
  • 2 tbsp red wine vinegar
  • 1 tsp Dijon mustard
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  • Cook the pasta in salted water until al dente. Drain and rinse with cold water.
  • In a large bowl, combine the pasta, tomatoes, cucumber, bell pepper, and red onion.
  • In a small bowl, whisk together the olive oil, vinegar, mustard, salt, and pepper.
  • Pour the dressing over the salad and toss to combine.
  • Garnish with feta cheese and parsley. Chill in the fridge for 30 minutes before serving.

Notes

  1. This pasta salad can be made up to a day in advance.
  2. For added protein, toss in grilled chicken or chickpeas.
